Black Bean and Mango Salad

Ingredients:

2 cups cooked brown short rice

2 (15 - ounce) cans black beans, rinsed and drained

1/2 cup finely chopped red onion

1 green bell pepper, seeded and diced

1 large tomato, diced

1 large avocado, pitted and diced

2 cups frozen corn, thawed

1/2 cup diced mango

1 jalapeno, seeded and minced

3/4 cup chopped fresh cilantro

Salt to season

Method:

1. Combine beans, rice, onion, bell pepper, tomato, avocado, corn, mango, jalapeno, and cilantro in a large salad bowl.

2. Pour dressing over salad. Toss gently to mix. Season with salt.


Ingredients for dressing:

1/3 cup unseasoned rice vinegar

2 tbsp. lime juice

1/2 cup diced mango

1/4 cup agave

1/2 tsp. freshly grated ginger

Salt to season.

Method for dressing:

Add all ingredients to a food processor and process until smooth.
