2 cups old fashioned rolled oats - Or you can try Spelt flakes
2 tbsp. Chai seeds
2 tbsp. Unsweetened shredded Coconut flakes
1/4 cup walnuts, roughly chopped
1/4 cup maple syrup
1/4 cup dried apricots
1 cup frozen Blueberries
3 1/2 cup unsweetened almond milk
1/4 cup blueberry soy yoghurt
1. Add all the ingredients in a large bowl. Mix well. It will seem very wet but the chia seeds and oats, or spelt flakes, will absorb most of the milk. Cover and place in the refrigerator to set overnight.
2. To serve in the morning, put in a small bowl and serve with some fresh blueberries.
