Chunky Guacamole and Cumin spiced Potato slices served with Whole Wheat Pita bread and Humus

(Serves 2-3)


Ingredients for the Guacamole:


2 large scallions

1 ripe large Tomato

1 half red Bell Pepper

1 ripe Avocado

Juice of half a Lime

1tsp pink Himalaya salt


Ingredients for the Potatoes:

2 medium sized Potatoes

Extra Virgin Olive Oil

tsp ground cumin


Method:

1.Dice the scallions, tomato and bell pepper (in chunks around ¼ inch wide). Squeeze over the lime juice and add salt to taste.

2. Peel the avocados and take the pit out. Mash with a fork and add the scallions, tomato, bell pepper, lime juice and salt.

3.Peel and slice the potatoes (about ¼ inch or less) toss with olive oil, salt and the cumin.

4. Heat a nonstick pan (the wider the better) – on medium heat. Fry the potato slices for about 2-4 mins each side until golden brown.

5. Serve with pitta pockets.
