Mango Pudding with Coconut milk


1 can of unsweetened coconut milk

1 cup pureed mango

1-4 tbsp. raw cane sugar

1/4 cup unsweetened coconut milk mixed with 2 tablespoons cornstarch

1 teaspoon lime juice

Fruits to decorate


1. Combine coconut milk, mango puree, and cane sugar in a medium-size sauce pan. Bring to a boil over medium-high heat.

2. Stir in milk with cornstarch and lime juice. Continue boiling until mixture becomes thick, 2-3 minutes. Remove from heat.

3. Pour into serving dishes and refrigerate until thickened.

4. Decorate with fresh fruits, ice cream or coconut whipped cream.
