Chocolate Chip - Banana Bread

Ingredients:

40g coconut butter

30g coconut oil

¼ cup maple syrup

200g whole Spelt Flour

Pinch of sea salt

1 tsp baking powder

1 tsp baking soda

1 tbsp. apple cider vinegar

4 banana’s (I used frozen ones)

¼ cup vegan chocolate chips

Method:

Preheat oven to 350F. Gently melt the coconut butter and oil in a saucepan over low heat. Stir in the maple syrup, with 1 tbsp. apple cider vinegar. Mesh up 3 bananas and stir into the bowl. Set aside and let cool.

Mix the baking powder, baking soda and cinnamon, salt to the Whole Spelt Flour mixture. Stir the wet ingredients to the dry ingredients and gently mix the one banana into the mixture. I cut it up in four small pieces. Add the chocolate chips. Don’t overmix.

Bake in the oven for 45 minutes and check if a wooden skewer comes out clean.
