1 cup organic regular cut oats
1/3 cup organic whole wheat flour
1 ½ tbsp. ground cinnamon
¼ tsp salt
¼ cup coconut oil, melted
¼ cup peanut butter
¼ cup coconut nectar
2 tsp vanilla extract
¼ cup maple syrup
¾ cup dried cranberries
¾ cup chopped almonds
1.Preheat oven to 325F. Line an 8-inch square baking pan with parchment paper. Set aside.
2.Mix the dry ingredients together with the wet ingredients.
3. Transfer to prepared baking pan and press firmly into an even layer.
4. Bake for 25-28 minutes or until top sets and its golden brown around the edges.
5. Remove from the oven and let cool in the baking pan for 1 hour, then transfer to the fridge for another hour. This will firm up the bars and will help them stay compact.
6.Remove from the fridge, and cut into bars.
7. Store at room temperature in an airtight container.
