Individual Heart shaped Plum cakes

8 mini cakes

250g (2 cups) flour

100g (1cup) almond meal

120ml (1cup) oat milk

2 tsp baking powder

2 tsp lemon zest

250ml (1 cup) aquafaba

70g (1/3 cup) coconut sugar

1 Plum


1. Mix flour, almond meal baking powder, lemon zest and sugar.

2. Add oat milk and mix.

3. In a separate bowl, blend aquafaba until it becomes really thick and add it to the batter.

4. Cut plum into 8 pieces.

5. Put the mixture in molds and put one slice of plum on each cake. Bake on 180C for 20 to 30 minutes.

6. Cover with powdered sugar.
