Coconut & Cranberry Granola

Makes about 5 servings

Ingredients:

1 cup quick-cooking oats

1/3 cup roasted unsalted peanuts

1/3 cup unsweetened coconut shreds

1/3 cup coconut nectar

1/4 cup unsweetened dried cranberries

1/4 cup ground flaxseed

2 tablespoons sliced almonds

2 tablespoons cacao powder

1 tablespoon chia seeds

Pinch of salt

Method:

1. Preheat the oven to 300F/150C.

2. Mix all of the ingredients in a bowl, making sure everything is coated with the coconut nectar.

3. Spread the granola on an ungreased baking sheet, then bake for 20 minutes.

4. Let cool and then store in an airtight container at room temperature.
