Home-made Granola

(Makes 12 servings)


1 cup water

½ cup panela sugar

1/3 maple syrup

2 teaspoons vanilla extract

4 ½ cups old fashioned oats

1 cup unsweetened shredded coconut

1 cup dried fruits – I used sour cherries

½ cup cranberries

½ cup chopped almonds

½ cup chopped walnuts

1 teaspoon cinnamon

½ teaspoon nutmeg


Method:

Preheat oven to 300F. Line a baking sheet with parchment paper.

Add water, panela sugar, maple syrup, and vanilla extract to a large saucepan. Cook over medium heat for 2-3 minutes, until sugar is dissolved.

In a large bowl, mix together oats, coconut, dried fruits, nuts and spices. Add wet mixture to dry mixture and mix until well coated.

Thinly spread mixture on lined baking sheet and bake for 1 hour, stirring every 15 minutes, until golden brown.

Let cool and then transfer to an airtight container.
